Designing a Water-of - life

“From Distillation to Creation. More than a story, a Story. "

Chapter 3: The Assemblies

Once the cellar master has made the estimation that the aging is sufficient, he will begin “the cuts”, that is to say the creation of harmonious blends of several eaux-de-vie of origins and ages. different.

The alcohol consumption rate (40% vol. Minimum) can also be reached by gradually adding what are called "small waters", a blend of Armagnac and distilled water aged independently and used exclusively for assemblies says  "Reducers".

Chapter 4: The Vintages

Specifically Armagnacaise, the vintage corresponds exclusively to the year of harvest. When the aging cellar is wet, the eaux-de-vie are sold at their natural degree of aging, generally between 40% and 48% vol, which causes the reduction to not always be practiced here.

In doing so, in bottles, the Armagnac no longer ages. This is why, it is imperative to take care to keep the bottle upright so that the alcohol does not reach the stopper. This is how our fabulous story about the conception of this wonderful nectar ends.
